As I look at the information on this site... both the P6100 Duo core processor and almost all of the i3,i5 and i7 processor series all use a G1 socket. Does this mean I can upgrade me G72 HP to an i7 processor?

You shouldn't have problem upgrading to socket G1 Core i3, i5 and i7 mobile processors. HP G72-B00 series support list includes the latest i3 and i5 CPUs:

http://h20000.www2.hp.com/bizsupport/TechSupport/CoreRedirect.jsp?redirectReason=DocIndexPDF&prodSeriesId=4247537&targetPage=http%3A%2F%2Fbizsupport1.austin.hp.com%2Fbc%2Fdocs%2Fsupport%2FSupportManual%2Fc02623152%2Fc02623152.pdf

The document doesn't show Core i7 dual-core processors, but they should work too. Core i7 quad-cores will probably work. They have higher power dissipation, and, since they're not in the support list, I can assume that the laptop's thermal solution may not be adequate for them.

Did you upgrade the P6100 as I am looking to do the same thing! Any help would be great!
