I am looking into the benefits of either option and which would be the better choice overall for the price.

This PC is intended for work rather than gaming, it will mainly be running
After-Effects / Premiere / 3ds Max, but I am not familiar with Dual CPU rigs and how they work with these programs.

I am looking at choosing one of two options:

Dual Intel® Core™ i7-3820 Processors
+
ASUS Z9PE-D8 WS Dual LGA 2011 Intel C602

Or

Single Intel® Core™ i7-3930K Processor
+
ASUS Sabertooth X79 LGA 2011 Intel X79

Intel Core i7-3820 is a single system processor Confused
you will need equivalent Xeon for the dual board

need to check board info.. but should be these

and you have choice of higher frequency Quad core
or slower frequency Hex core

Ah, I see. Thank you for that.

My next question would be (and i've read a lot of topics on this but...) would the gain of 2 cores and 4MB of L3 out-weigh the price difference between the 2 CPU's.. ?

For video editing and other apps that use the extra cores, you would benefit from them. A game player wouldn't as most games do not use so many cores. Whether the gain outweighs the cost is something only you can answer (eg, will you earn more money by completing the work faster?). The same applies to a dual processor system with a pair of Xeons.
