hello,

perhaps my question is stupid but
is it possible to replace amd E1-2100 in acer aspire V5-123
by a most rapid one like E1-2500 or E2-3000 ? Rolling Eyes

Sorry, no.

E1-2100 is packaged as BGA, meaning it is soldered to the motherboard. It cannot be replaced without special equipment.
