Hi guys, I have a Shuttle AK31 KT266A (sn- AK31A34EE14804845) motherboard, it's been a trooper and I'd like to squeeze another year out of it before I have to go dual core...I've got an AMD 1700+ in there now, what's the best cpu upgrade option for me, i.e. which is the best chip my board will run? Thanks a ton!

Would an Athlon XP-M 3000+ Socket 754 run in it? I've found a decent deal on one of them and am wondering whether or not to buy it.

No, socket 754 processors won't work on it.
I think the fastest CPU supported by your motherboard is Athlon XP Palomino 2100+:
