I read that these were produced in speeds up to 233Mhz but didnt see any above that which is why I am curious about this chip. Are these common?

Standard speeds for C6 were 180, 200, 225 and 240 MHz.

I meant for the Evergreen Mx Pro versions but I just came across some additional documentation that shows the 240 so probably nothing special.

The missing pins are named BF0 - BF2, and are the bus frequency control pins. I am not sure of the effect of removing them all, but the IDT manual says:

IDT WinChip C6 Processor Datasheet wrote:
Because the IDT WinChip C6 is designed to support several
frequencies higher than 233 MHz, the IDT WinChip C6
processors interpret the bus frequency control pin slightly
differently from the Pentium processor’s specification. The IDT
WinChip C6’s interpretation is shown in Table 4-1. Note that
the changes redefine fractional bus frequency multiples (which
the IDT WinChip C6 does not support) to higher multiples. A
new pin, BF2 (W-35), is also supported to allow for higher
frequencies. The IDT WinChip C6 pulls up all three of the BF
pins so that the default is 4x multiplier.

Code:
BF2    BF1     BF0     IDT WinChip C6 Clock Ratio      P55 Clock Ratio
1       0       0         reserved                          5/2x
1       0       1         3x                                3x
1       1       0         2x                                2x
1       1       1         4x                                3/2x
0       0       0         reserved
0       0       1         5x
0       1       0         4x
0       1       1         reserved
