tell me where I can see detailed descriptions for Quad / Six Core Opteron (23xx, 24xx, 83xx, 84xx), or more precisely - how much max size RAM they can support

Only motherboard is limitation if you were worried in your server/PC.

Opteron's memory controller imposes limits on the maximum amount of physical memory. This usually is <number of channels> x <max number of RAM sticks per channel> x <max stick size>. Opteron datasheet has this data:
Package AM2+: Supports up to four (4) unbuffered DIMMs
Package AM3: Supports up to four (4) unbuffered DIMMs
Packages Fr2 (1207), Fr5 (1207), and Fr6 (1207): Supports up to eight (Cool registered DIMMs
Package C32: Supports up to six (6) registered DIMMs or up to four (4) unbuffered DIMMs
Package G34: Supports up to twelve (12) registered DIMMs or up to eight (Cool unbuffered DIMMs

These RAM stick quantities already take into account the number of memory channels.
