I'd like to upgrade my CPU from G840 2.80GHz to Intel Core i7-2600S on my ThinkCentre Edge 71 (1578E1G) small form factor PC.

Intel H61 chipset supports all Sandy Bridge processors, and even some Ivy Bridge CPUs. The board should work with Core i3-2xxx, i5-2xxx and i7-2xxx. I would stay away from Ivy Bridge processors unless you know for sure that they are supported by BIOS. Also, don't buy Core i5-2xxxP unless you have a discrete card, and know that the BIOS supports them. If you want to be absolutely sure that the upgrade works then upgrade to Q0 stepping processors (G840 has Q0 stepping) with TDP about 65 Watt or lower. Luckily, all Core i3-21x0 CPUs have Q0 stepping and 65W or lower TDP.

Noctua NH-L12 Low Profile CPU Cooler is to high, I need max 75mm.
It can be expensive, but important is very good cooling and really low noise. |

| I've ordered i7-2600S and heatsink Shuriken: SCBSK-2100 and I hope both are OK for my motherboard and small-form-factor desktop. |

Since it supports sockets FM1/FM2, and the most energy efficient CPUs for those sockets have 65 Watt TDP, then I would say that it will work with Intel i7-2600S. It's impossible to tell for sure because the specs don't specify maximum supported TDP, and they don't include a list of supported processors.
