Are those chips both Engineering Samples or not? What does ES mean then?

For MIPS processors like these the ES is more like an intel QS (Qualification Sample) or the XC prefix on motorola's

Not fully tested/guaranteed to meet spec.

Usually early production, the VR5000 is very nice with the speed added later
