A Sandy Bridge i7 is better at overclocking on air than a FX-6300? |

It varies from one chip to the next if they are not specially binned. My i7-2700K did 5.5 GHz under water, 5.1 under air. That was from a specially binned batch. _________________ My graphics card database can be found at http://www.gpuzoo.com.

What's a "specially binned batch?" Like a certain sSpec that has a uncommon stepping? |

People test batches of chips to find those with the greatest overclocking potential. The best of the best sell for premium prices. The typical chip from most batches will only work as advertised. If you get an award winning chip by accident, go buy a pile of lottery tickets, because you would be the luckiest overclocker out there  _________________ My graphics card database can be found at http://www.gpuzoo.com.

So should I try to overclock my FX-6300 to 5GHz with air cooling, or 4.5GHz? I don't know where to start with overclocking. I figured this would be a good way for me to acquire more knowledge on CPUs. |

I would join an overclocking forum, read a guide and a few stickys, ask some questions, and give it a shot.
Just remember, don't take chances with what you can't afford to lose.
The road to high clocks is littered with dead hardware.  |

Yeah, overclocking is often not an exact science - it is craftsmanship and experience based. Altso it's a question of courage
As Mr. Scott suggests, join a forum, read what other users experience, get som hands-on experience your self, but be aware that you might get some expenses from dead hardware. |
