I have a single Intel Xeon 2.8 Stepper SL72F. Would it be possible to use another another step model with the exact same performance stats to make a DP pair?

Check this document :

At page 16 you will find the Sspec of your cpu giving you the core Stepping -> M0

Then check page 19 for mixing possibilities -> you can mix with all B0 to M0 steppings cpus.

Then look again at the Sspec table to look which Sspec are for B0 to M0 stepping cpus...
